Instructions

  • Preheat oven at 425F.
  • Grate zucchini, remove excess moisture with cheesecloth or other means.
  • Transfer zucchini in a large bowl, add egg, garlic, oregano, 1 cup mozzarella, parmesan, baking powder, salt, pepper, stir until completely combined.
  • Transfer dough on a cookie sheet covered with parchment paper.
  • Pat into an average thin crust, cook for approx 25 min, until golden and dried out.
  • Sprinkle with remaining 2 cups mozzarella.
  • Sprinkle red pepper flakes and parsley.
  • Cook for an additional 10 min; let cool and cut into 12 pieces.
  • Serve as is or with sugar-free tomato sauce of your choice.
