Sprinkle zucchini with salt. Let it sit for 5 min. Squeeze extra juice with your hands.
Whisk eggs with herbs/spices of choice in a big measuring cup.
Add squeezed zucchini, whisk together.
Heat frying pan on medium heat, melt a bit of butter, and pour 1/4 of mixture. Once mixture is set, wrap it in a roll from one side using silicone spatula.
Melt one more piece of butter, add 1/4 of mixture to the roll on the pan, let it set (~1 min).
Repeat until butter and egg mixture is over. Leave roll on a pan for another 3 minutes.
Serve on a warm plate, garnish with some chopped green onions.
