Ingredients:
2 ounces of Aubergine
1 ounce of Courgette
2 ounces of Onion
2 ounces of Red pepper
1 ounce of Yellow pepper
8 Eggs
25 grams of Butter
250 grams of Goats cheese
Needed:
Instructions
Fry all veg in butter.
Whisk together eggs and pour over.
Move eggs around until start to ‘set’ them leave to cook for approximately 1 1/2 minutes.
Grate over hard goats cheese and then add soft goats cheese.
Put under a grill for about 5 minutes until brown.
