Ingredients:
3 oz. (90g) Mozzarella, grated
1 ⅓ oz. (40g) Almond flour
⅓ oz. (10g) Golden flaxseed meal
Oregano, finely chopped (optional)
Sea salt to season
Needed:
Oven
Baking tray
Mixing bowl
Non-stick silicone baking mat or parchment paper
Instructions
Preheat oven to 375ºF / 190ºC
Mix the almond flour, flaxseed meal, oregano, salt, and pepper.
Put the mozzarella in a microwaveable bowl - and heat for 15 seconds - do this 5 or 6 times, stirring in between until melted
Add dry mix to melted cheese and knead into dough-like consistency - work quickly while cheese is relatively warm
Roll the dough onto non-stick silicone baking mat or parchment paper, until thin
Bake for 5-10 minutes, until the dough starts to golden
Remove and portion dough into triangles, and return to oven for a couple of minutes until golden brown
