Tofu Noodle Pancetta Carbonara

Ingredients:
1 lb of tofu noodles
4 oz of pancetta
3 egg yolks
5 tbsp of ground parmesan
1/2 cup of dry white wine
1/2 tsp of salt
1 garlic clove
Freshly ground black pepper

Instructions
Boil a pot of water and rinse noodles
In a mixing bowl blend together egg yolks, wine, and 4 tbsp of ground parmesan.
Slice pancetta and sear it in a large skillet at medium heat
Reduce the heat to a medium-low and add egg mixture
Stir constantly with a spatula to even the heat and avoid egg curling up
When the sauce thickens add salt, pepper and noodles
Toss and stir the skillet and let the noodles to soak up some sauce
Rub pasta bowls with garlic and plate the pasta
Top with remaining ground parmesan
