Instructions

  • Boil a pot of water and rinse noodles
  • In a mixing bowl blend together egg yolks, wine, and 4 tbsp of ground parmesan.
  • Slice pancetta and sear it in a large skillet at medium heat
  • Reduce the heat to a medium-low and add egg mixture
  • Stir constantly with a spatula to even the heat and avoid egg curling up
  • When the sauce thickens add salt, pepper and noodles
  • Toss and stir the skillet and let the noodles to soak up some sauce
  • Rub pasta bowls with garlic and plate the pasta
  • Top with remaining ground parmesan
