Tarragon and Tomatillo Lamb Stew

Ingredients:
1.5 lb of Lamb leg boneless
1 lb of Tomatillo
1/2 cup of sliced onions
2 tbsp of butter
2 tbsp of olive oil
2 chilies
1 cup of tarragon
1/2 cup of parsley
1/2 cup of cilantro
2 tbsp of lime juice
2 tsp of salt
1 tsp of garlic powder
1 tsp of black pepper
1 cup of water
Needed:
Instructions
Cut lamb leg into 2 oz pieces and
Sear them with oil and butter on a large skillet until golden brown
Transfer the meat to a deep pan and season with salt and pepper
Add onions and garlic to the same skillet and sweat for 3-5 minutes at medium-low
Transfer sweat mixture to the pan, add water, garlic powder and salt to taste
Seal pan and slow cook at 205 F for 3 hours 20 minutes
Char chilies and Tomatillo on a lightly oiled pan
Add herbs to the pan, top with sliced chilies and tomatillo, add salt and lime juice
Seal again and slow cook for another 40 minutes
