Instructions

  • Cut lamb leg into 2 oz pieces and
  • Sear them with oil and butter on a large skillet until golden brown
  • Transfer the meat to a deep pan and season with salt and pepper
  • Add onions and garlic to the same skillet and sweat for 3-5 minutes at medium-low
  • Transfer sweat mixture to the pan, add water, garlic powder and salt to taste
  • Seal pan and slow cook at 205 F for 3 hours 20 minutes
  • Char chilies and Tomatillo on a lightly oiled pan
  • Add herbs to the pan, top with sliced chilies and tomatillo, add salt and lime juice
  • Seal again and slow cook for another 40 minutes
