Cut 2 bell peppers in half and using a spoon, cut out the inside/seeds. Set aside.
Grab 1 lb of grass-fed ground beef and cook on medium heat, using a wooden spatula to break it down. You can cook these with 1 tablespoon of your oil of choice. Once it is almost cooked, add a packet of taco seasoning.
Once the meat is almost finished, spoon a little into the bell peppers, add some shredded cheese, put some more beef on top of the cheese, then add more cheese on top.
Put in the oven at 425F for about 15 minutes.
Serve on top of a bed of your favorite greens and veggies. We used arugula, cilantro, avocado, onion, jalapeño, and served with some sour cream.
