Sweet & Savory Breakfast with Cheesy Egg

Ingredients:
1 Large egg
1/3 cup shredded cheese of choice
½ small avocado
2 tablespoon ricotta
1 tablespoon low-carb granola or fresh berries
Sliced cucumbers
Salt & Pepper to taste

Instructions
Get a pan on medium heat. Spray with olive oil.
Add 1/3 cup finely shredded cheese in a circle. We used gouda here.
When the cheese starts to melt and firm up, crack an egg on top then put the lid on.
Cook on medium until egg whites have been set.
Using a spatula, gently lift up around the edges and then plate with the rest of your food.
We served with half sliced avocado, some ricotta and granola, and fresh cucumber slices.
