Instructions

  • Heat oil in a pan over medium heat, add sliced mushrooms, minced garlic. Cook until liquid is evaporated. Let cool down to room temperature
  • Take the skin off the chicken legs. Chop remaining meat into small pieces, retain bones for bone broth.
  • Mix meat with grated carrots, mushrooms, spices of choice, season well with salt.
  • Stuff chicken skins with mushroom mixture, pin skins with tooth picks to hold their shape.
  • Bake legs in pre-heated oven (350 F) for 20 minutes or until crispy and golden brown.
