Stuffed chicken legs

Ingredients:
1 small
4 legs, Chicken
4 cup, Mushrooms
5 tbsp(s), Avocado Oil
2 cloves garlic

Instructions
Heat oil in a pan over medium heat, add sliced mushrooms, minced garlic. Cook until liquid is evaporated. Let cool down to room temperature
Take the skin off the chicken legs. Chop remaining meat into small pieces, retain bones for bone broth.
Mix meat with grated carrots, mushrooms, spices of choice, season well with salt.
Stuff chicken skins with mushroom mixture, pin skins with tooth picks to hold their shape.
Bake legs in pre-heated oven (350 F) for 20 minutes or until crispy and golden brown.
