Instructions

  • Grind Zucchini squash and onions with a coarse grater in a bowl. Add eggs and mix well, add soy flour, psyllium and flax mills and mix until smooth, season with salt and pepper. Let the mixture sit for 10 minutes.
  • Preheat nonstick skillet to a medium heat, add oil. Spoon mixture to the skillet and panfry fritters from both sides until golden brown.
  • Serve ready fritters with sour cream and cod roe.
