Spinach Roll with Cream Cheese

Ingredients:
2 cups, Spinach (chopped)
3 tbsp, Salmon Caviar
3 tbsp, Cream cheese
4 medium, Egg
6 tbsp, Mayonese
Salt and pepper

Instructions
Microwave spinach for 2 minutes. Let it cool down and squeeze out any extra liquid.
Pulse in a food processor eggs, spinach and mayonnaise until smooth. Add salt and pepper to taste.
Line baking sheet (10 by 10 inches) with parchment paper, grease it with some cooking spray, and pour egg mixture.
Bake in preheated oven for ~12 minutes (360F F). Do not let it overcook, edges should be just a bit darker.
When done, spread cream cheese with the spoon over the backed egg sheet, top with some caviar (chopped salted salmon can also be used instead).
Roll eggs with filling in a tight roll from one side. Cover with plastic wrap and refrigerate until needed. It can be stored up to 3 days.
