Instructions

  • In a blender cup combine eggs, cream, cheddar, salt and blend until smooth.
  • Preheat a nonstick skillet to a medium low, add butter and let it melt and spread.
  • Pure in scramble mixture and simmer occasionally scrubbing the bottom with silicone or wooden spatula to prevent sticking and burning until mixture thickens evenly to desirable hardness.
  • Immediately transfer to a plate with a side of avocado and Arugula. Top with salmon slices, ricotta cheese, flax and capers.
