In a blender cup combine eggs, cream, cheddar, salt and blend until smooth.
Preheat a nonstick skillet to a medium low, add butter and let it melt and spread.
Pure in scramble mixture and simmer occasionally scrubbing the bottom with silicone or wooden spatula to prevent sticking and burning until mixture thickens evenly to desirable hardness.
Immediately transfer to a plate with a side of avocado and Arugula. Top with salmon slices, ricotta cheese, flax and capers.
