Ingredients:
¼ cup almond flour
¼-⅓ cup shredded cheese (preferred: gouda)
2-3 tbsp scallions/green onions (chopped)
1-2 tbsp baby kale (finely chopped)
1-2 tbsp herbs of choice
1 egg
2-3 tbsp unsweetened almond/coconut milk
Salt & Pepper to taste

Instructions
Preheat your waffle iron.
In a bowl, mix almond flour, shredded cheese, scallions/green onions, baby kale, herbs and egg.
Mix everything well, then add unsweetened almond or coconut milk to your batter or as needed.
Season to taste (salt, pepper, garlic powder, herbs, etc)
Cook according to your waffle iron directions or until cooked.
Serve up as preferred. We topped this with a poached egg, half an avocado, blueberries and some pecans.
