Ingredients:
4oz fish of choice – we used salmon
¾ cups Cauliflower (riced)
½ tsp fish sauce
½ tsp sesame oil
½ cup Arugula
1 tbsp Chipotle mayo
½ tbsp Soy sauce
½ avocado
Radish (sliced) to taste
Jalapeno (sliced) to taste
Fresh cilantro to taste
Pickled ginger to taste

Instructions
Add the base of cauli rice (use base of choice) to bowl.
Add fish sauce, sesame oil and arugula to cauli rice.
Start with any kind of sushi-grade, smoked, or even cooked fish. We used sushi-grade salmon and toss fish in chipotle mayo and soy sauce.
Top with avocado, sliced radishes, sliced jalapeño, fresh cilantro, pickled ginger, sesame seeds, and any other favorite toppings.
