Roasted tomatoes, ricotta and pumpkin seeds

Ingredients:
6 oz. (180g) Tomatoes, assorted and halved
6 oz. (180g) Ricotta
1 oz (30g) Pumpkin seeds
½ oz. (15g) Basil, chopped
1 garlic clove
Extra virgin olive oil to season
Sea salt to season
Needed:
Oven
Baking tray
Non-stick silicone mat
Instructions
Preheat oven to 400ºF / 200ºC
Finely chop garlic and basil
Half tomatoes, line tray and season with salt, garlic and olive oil
Roast for 5-10minutes
Mix tomatoes with ricotta and pumpkins
Season and serve
