Ingredients:
2 x Zucchinis (~9 oz. / 270g), Peeled entirely
3 oz (90g) Ricotta, cumbled
2 oz (60g) Arugula
3 oz (90g) Extra virgin olive oil
2 oz (60g) Pine nuts, toasted
Sea salt to season
½ Lemon, juiced to season
Needed:
Vegetable pasta maker or vegetable peeler
Blender
Mixing bowl
Instructions
Mix zucchini pasta, olive oil, arugula and ricotta into a bowl
Season and serve with pine nuts as a garnish
