Ingredients:
2 Eggs
2 Cups of Arugula
1/2 Avocado
1 Tbsp of Vinegar
1 tsp of Red Pepper Flakes
Pinch of Salt and Pepper
Needed:
Instructions
Pour about 2 inches of water and a splash of vinegar into a pan and bring it to a boil.
Once the water is boiling, gently add in 2 cracked eggs.
Turn the heat off and cover the pan for 4 minutes.
Gently take out the poached eggs with a spatula and place on top of a bed of arugula.
Serve half an avocado on the side and sprinkle the red pepper flakes, salt and pepper on top
