Instructions

  • Pour about 2 inches of water and a splash of vinegar into a pan and bring it to a boil.
  • Once the water is boiling, gently add in 2 cracked eggs.
  • Turn the heat off and cover the pan for 4 minutes.
  • Gently take out the poached eggs with a spatula and place on top of a bed of arugula.
  • Serve half an avocado on the side and sprinkle the red pepper flakes, salt and pepper on top
