Persian Herb & Feta Omelets with Bacon & Avocado

Ingredients:
2 large eggs
3 tablespoons fresh herbs, chopped (cilantro, dill, mint and basil)
2 tablespoons feta
Sea salt
Black pepper
½ tablespoon butter
Bacon
Tomatoes, sliced
Avocado

Instructions
In a bowl, add chopped herbs, feta, eggs, sea salt and pepper. Whisk together.
In a pan, on medium heat, melt butter and pour in the egg mixture. Cook for 30-45 seconds tilting the pan to make sure the runny eggs get cooked well.
Top egg with more herbs, cheese or spices as desired.
Flip over using a large spatula and cook for a few more seconds until cooked.
Serve with bacon, tomatoes and avocado.
