Peppers, poached eggs, kale and gouda

Ingredients:
2 Bell peppers (3oz. / 90g), tops and seeds removed
3 oz. (90g) gouda, grated
2 eggs
1 tbsp (15ml) Extra virgin olive oil
1.5 oz (45g) kale, chopped
Sea salt to season
Needed:
Saute pan
Oven
Baking tray
Instructions
Preheat oven to 400ºF / 200ºC
Prepare oven dish
Brush peppers with extra virgin olive oil and roast for 10 minutes
In a bowl, mix gouda, kale and remaining extra virgin olive
Remove peppers, place half cheese mix into peppers
Crack an egg into the peppers, and top with remaining cheese mix
Bake for 15 mins
