Instructions

  • In a small food processor, add pecans, parmesan cheese, fresh parsley, and pulse leaving larger pieces of pecans. Taste and spice further as desired.
  • Dab salmon down with a paper towel then, drizzle and massage in a little bit of avocado or olive oil followed by the pecan-parmesan-parsley mixture.
  • Bake in the oven for 15 minutes at 450F or until done.
  • Plate with a big base of mixed greens, sautéed mushrooms and peas, half hard-boiled egg, cherry tomatoes, and ½ small avocado.
