In a blender cup combine eggs, cream, cheddar, pinch of salt and blend until smooth.
Add butter to the pan and let it spread, pure in scramble mixture and simmer occasionally scrubbing the bottom with silicone or wooden spatula to prevent sticking and burning until mixture thickens evenly to desirable hardness.
Immediately transfer to a plate with a side of arugula, sliced tomatoes and crushed feta, top with shaved red onions and pastrami slices.
