Instructions

  • Preheat the oven to 350.
  • Peel and dice the squash. Put on a baking tray and bake for 25 minutes until fork soft.
  • Mix sweetener, cinnamon powder.
  • In a food processor add eggs, sweetener mixture, squash, vanilla and cream.
  • Blend to smooth then add xanthan gum powder carefully during blending.
  • Mix carefully with whipped cream cheese in a mixing bowl.
  • Transfer to a greased muffin tin and bake in the oven for 35 minutes at 325.
  • Top with pecan.
