Ingredients:
0.5 cup of erythritol
3 eggs
2 tbsp of heavy cream
0.5 lb of whipped cream cheese
0.5 tsp of xanthan gum
1 lb of butternut squash
1 tbsp of cinnamon powder
2 tsp of vanilla extract
2 oz of pecans

Instructions
Preheat the oven to 350.
Peel and dice the squash. Put on a baking tray and bake for 25 minutes until fork soft.
Mix sweetener, cinnamon powder.
In a food processor add eggs, sweetener mixture, squash, vanilla and cream.
Blend to smooth then add xanthan gum powder carefully during blending.
Mix carefully with whipped cream cheese in a mixing bowl.
Transfer to a greased muffin tin and bake in the oven for 35 minutes at 325.
Top with pecan.
