Not required but recommended: marinate shrimp with 1 finely chopped garlic clove, fresh parsley, sea salt, pepper, and olive oil. Let it refrigerate for about 1-2 hours for best results, otherwise, feel free to just mix the shrimp and other ingredients before cooking.
Put a pan on medium heat, add 3 sliced garlic cloves in butter and sautee for 30-45 seconds.
Add your shrimp and cook for about 1 minute on each side. Remove the shrimp and place in a bowl.
To the same pan, add white wine and stir/scrape the remainders of the shrimp & garlic. Then add heavy cream. And let it reduce down by about half. You can now add the raw spinach and fresh parsley.
Mix well, then add lemon juice and juice from capers and capers.
Add shredded Parmesan and then add your shrimp back in. Turn on low for a minute and then turn off. Serve as is or with some low carb noodles, spiralized zucchini, rice, or whatever your favorite base!
