Ingredients:
8 oz of chicken breast sliced
2 tbsp of tomatoes diced
1/2 avocado diced
1 tsp of minced chilli peppers
1 tbsp of minced onions
1 tbsp of cilantro leaves
1/2 of lime juiced
1 tbsp of butter
1 1/2 cup of shredded mozzarella
1 tsp of salt
1/2 tsp of black pepper
Needed:
Instructions
Preheat the oven to 400 F and prepare a baking sheet with parchment paper
Form 3 1/4 inch thick and 7 inch in diameter circles of mozzarella on the sheet
Bake mozzarella circles in the oven for 7-10 minutes until golden brown from edges
Meanwhile preheat the skillet and brown chicken filet with butter until cooked
Season chicken with salt and pepper
Take mozzarella circles out of the oven and let them cool for 1-2 minutes
Form wrappers aka tacos from mozzarella circles and stuff them with chicken
Top quesadillas with avocado, tomatoes, onions and cilantro, sprinkle with lime juice
Serve immediately
