Keto Friendly Pumpkin Pie Cream Cheese Cookies

Ingredients:
1 cup coconut flour
3 oz softened cream cheese
¼ cup softened butter
1 can 15 oz pumpkin puree (not pumpkin pie filling)
½ cup sweetener
¼ cup Brown sweetener
1 room temp egg
1 tsp vanilla extract
1 tsp cake batter extract
½ tsp baking soda
1 Tbsp sugar free maple syrup
2 tsp pumpkin spice
1/2 tsp ground cinnamon
¼ tsp salt

Instructions
Preheat oven to 350 F
Line a baking tray with parchment paper
In a large bowl, whisk butter and sweetener.
Add the softened cream cheese, egg, extracts, syrup, and pumpkin puree. Whisk until smooth.
Add the coconut flour, pumpkin pie spice, salt and beat until combined, This mixture will be sticky!
Scoop large spoonful’s on to parchment paper lined baking tray. You may need a few baking trays.
Bake for 13-15 min.
NOTE: Cookies will be soft. Allow to cool completely and then transfer to wire baking rack to cool.
Optional: Glaze, frost or top with whipped cream and chopped walnuts.
