Instructions

  • Using a food processor or a high-speed blender, blend the almond flour, egg white protein powder, cream of tartar, baking soda, and salt for a few minutes.
  • Next, add in the eggs, lemon zest, and stevia and process until the batter becomes smooth.
  • Add in the blueberries and stir using clean hands or a spatula.
  • Grease a loaf pan with oil or cooking spray then add the batter into it. Place the batter in an oven of 350F/177C and bake for about 20-30 minutes.
  • Once the bread is fully baked, take out of the oven, let cool for a few minutes then slice and serve.
