Ingredients:
8 oz of minced pork
8 oz of minced beef
2 oz of kale leaves picked
3 tbsp of chopped onions
2 tbsp of chopped parsley
3 tbsp of butter
6 tbsp of crushed tomatoes
2 tsp of salt
1 tbsp of tomato paste
1 tbsp of capers
1 tsp of garlic powder
1 cup of water
Some extra water for cooking and chopped parsley for garnishing
Needed:
Instructions
In a pan melt 1 tbsp of butter and sweat tomato paste, add crushed tomatoes
Add 1/2 cup of water, capers, garlic powder and salt to taste, cook for 5 minutes
In another pan sweat onions with remaining 2 tbsp of butter and cool down
In a mixing bowl combine meat with sweated onions, parsley, salt and remaining water
Form meatloaf with wet hands and transfer it to a pan
Top with tomato and capers sauce, seal the pan and slow cook at 210 fo 3 h 10 min
Add kale leaves to the pan 20 minutes before cooking time’s up
