Instructions

  • Pre-heat oven to 430F.
  • Season pork with some salt and pepper.
  • Add rosemary leaves.
  • Roll tightly piece, use kitchen thread to secure the roll.
  • Place meat roll in a deep baking tray, skin side up.
  • Bake for 30 minutes, reduce heat to 350F and bake for another 2 to 3 hours.
  • Switch off the oven, let it rest there for 30 minutes.
  • It can be both served cold and warm.
  • Store in a fridge for up to a week.
