Ice Hands with Norwegian Shrimp Salad

Ingredients:
8 oz of frozen Shrimp
1 tsp of Soy Sauce
3 eggs
2 oz of Lettuce
1/2 of Avocado
1/2 of Lemon (juiced)
2 oz of cucumber
2 Tbsp of parsley
1 tbsp of salt
2 tsp of heavy mayonnaise
Beets and scallions for garnishing
Latex gloves for ice hands molding
Needed:
Instructions
Fill gloves with water (or food coloring painted water), tighten up and freeze overnight, once the ice sets use warm water to take the gloves off.
Blanch shrimps in salted water, drain, season with soy sauce and lemon juice.
Dice cucumber, avocado and hard boiled eggs and mix them with mayo and chopped parsley in a mixing bowl, season with salt to taste
Spoon the mixture on the lettuce cups and top with shrimps
Garnish with shredded beets and scallions, arrange on the ice hands.
