Instructions

  • Add eggs, half the kale, half the baby spinach, into the blender, and season
  • Blend until smooth with visible specs of green
  • Heat non-stick pan, with a little oil
  • Add egg mixture, as it sets, shifts mixture with a spatula to cook evenly
  • Add remainder of kale, spinach and cheddar
  • Fold omelet over, in pan and gently plate
  • Season and serve
