Ingredients:
3 eggs
1 oz. (30g) Kale, chopped
1 oz. (30g) Baby spinach, chopped
3 oz. (90g) Cheddar, grated
Sea salt to season
Extra virgin olive oil to season
Needed:
Non-stick pan
Spatula
Blender
Instructions
Add eggs, half the kale, half the baby spinach, into the blender, and season
Blend until smooth with visible specs of green
Heat non-stick pan, with a little oil
Add egg mixture, as it sets, shifts mixture with a spatula to cook evenly
Add remainder of kale, spinach and cheddar
Fold omelet over, in pan and gently plate
Season and serve
