Goat’s cheese and spinach frittata

Ingredients:
8 Eggs, lightly whisked and beaten
5 oz. (150g) Baby spinach
5 oz. (150g) Goats cheese, broken into pieces
Sea salt to season
Black pepper to season
Extra virgin olive oil to season
Needed:
Saute pan
Oven
Instructions
Preheat oven to 375ºF / 190ºC
Heat saute pan and add a touch of oil once heated
Add spinach and stir for 1 minute, to gently wilt it
Add beaten eggs, and season with salt and black pepper, gently mix for 30 seconds
Cook over a low heat for 1 minutes
Scatter goats cheese over the egg mix and put pan into the oven
Bake for 5 minutes or until the centre is firm
Season and serve
