Score meat with the knife, insert fresh rosemary leaves in the cavities, and add sliced garlic.
Generously sprinkle meat with salt and pepper. Bake for 20 minutes.
Reduce heat to 320F and bake for ~2 hours. Every 30 minutes rotate meat on other side to ensure even cooking. Before meat is ready, spread soft ghee on top to form a crust.
Switch of the oven and let it rest inside for another 20 minutes.
