Instructions

  • Pre-heat oven to 420 F.
  • Score meat with the knife, insert fresh rosemary leaves in the cavities, and add sliced garlic.
  • Generously sprinkle meat with salt and pepper. Bake for 20 minutes.
  • Reduce heat to 320F and bake for ~2 hours. Every 30 minutes rotate meat on other side to ensure even cooking. Before meat is ready, spread soft ghee on top to form a crust.
  • Switch of the oven and let it rest inside for another 20 minutes.
  • Can be served with home-made mayonnaise or pesto
