Fast Pickled Spicy Cabbage

Ingredients:
4 cup, chopped, Cabbage (Sliced)
0.50 cup(s), Vinegar, Apple Cider
0.50 cup, Olive Oil
1 large, Onion (sliced)
1 medium, Carrots, (shreded)
3 tbsp., salt
2 cups, Water
Spices to taste (Bay leaf, Coriander seeds, etc.)

Instructions
Mix vegetables slices together, put in a glass jar.
Heat water with all spices and salt, stir occasionally.
Let it simmer for 10 minutes.
Remove from heat, add olive oil and apple cider vinegar.
Pour the brine over the cabbage in a jar. Let it cool completely, refrigerate for 3-5 hours.
Store in a fridge up to 2 weeks.
