Ingredients:
3 oz. (90g) Bacon
4 eggs
1 ½ oz. (45g) Cheddar cheese, grated
1 Tomato, large (~2 oz. / 60g), sliced
3 oz. (90g) Button mushrooms, roughly chopped
1 Tbsp (15ml) Extra virgin olive oil
Sea salt to season
Needed:
Large saute pan
Instructions
Heat saute pan, once hot add 1 tsp of oil and bacon, for 3 minutes and turn
After 2 minutes, slice tomatoes in half and place face down on pan for another 2 minutes, turn tomatoes around
Move the bacon and tomatoes to one side of the pan, add mushrooms to the leftover bacon fat and saute for 5 mins or until they soften
Remove the cooked ingredients, from heat, and add the remaining oil and fry the eggs
As the whites become cooked, sprinkle over the cheddar and add back bacon, mushrooms and tomato
Season and serve
