Ingredients:
5 Oz of sliced Ham
4 Eggs
4 Oz of Shredded Cheddar
1 Oz Red Onions
1 Tomato
2 Tbsp Cilantro
1 Tbsp of EV Olive Oil
Salt and Pepper

Instructions
Preheat the oven to 400F.
Layer ham slices the bottom of 4 3 inch nonstick muffin tins
Beat eggs in each, season with salt and pepper, add cheddar on the top. Bake for 15 minutes or until golden brown.
Meanwhile chop cilantro, onions and tomatoes, season and mix them with EV olive oil.
Let muffins cool for 5 minutes before taking them off the tins. Garnish with vegetable mixture.
