Using a medium bowl, add in the sardine then mash with the aid of a fork until they are all broken up into smaller pieces.
Next, add in the salt, psyllium, and the beaten eggs then mix properly to combine.
Let the sardine mixture sit for about 5 minutes.
Meanwhile, wash the cilantro with clean water then trim and chop as desired then add the cilantro into the bowl containing the sardine mixture and mix to combine.
Form small patties of about 12 pieces out of the dough then coat each in coconut flour.
Place a non-stick skillet over medium heat then add in 1 Tbsp of coconut oil.
Once the oil is hot, add in the 3 fish patties then fry for about three to 4 minutes on both sides. Make sure you flatten with a spatula.
Do the same for the rest of the fish patties, wiping the pan clean after each batch.
Place the cooked patties on a paper towel to drain then serve.
