Instructions

  • Using a medium bowl, add in the sardine then mash with the aid of a fork until they are all broken up into smaller pieces.
  • Next, add in the salt, psyllium, and the beaten eggs then mix properly to combine.
  • Let the sardine mixture sit for about 5 minutes.
  • Meanwhile, wash the cilantro with clean water then trim and chop as desired then add the cilantro into the bowl containing the sardine mixture and mix to combine.
  • Form small patties of about 12 pieces out of the dough then coat each in coconut flour.
  • Place a non-stick skillet over medium heat then add in 1 Tbsp of coconut oil.
  • Once the oil is hot, add in the 3 fish patties then fry for about three to 4 minutes on both sides. Make sure you flatten with a spatula.
  • Do the same for the rest of the fish patties, wiping the pan clean after each batch.
  • Place the cooked patties on a paper towel to drain then serve.
