Instructions

  • Cook a bag of almond pasta according to the directions on the bag.
  • While the pasta is cooking, start the sauce by melting butter in a saucepan.
  • Add spinach and mix for 1 minute.
  • After 1 minute, add cream cheese and mix well for a couple of minutes.
  • Add cream, shredded parmesan, and a couple of garlic cloves. Mix well on low.
  • Taste sauce and add some salt, pepper, garlic powder, chili flakes, lemon zest, or some fresh herbs. (You can do whatever you like and all of these are great options.)
  • Once the pasta is boiled, strain, add a couple of tablespoons of the pasta water to the sauce to lighten it up if needed.
  • Add the pasta to the sauce and cook for about a minute.
  • Top with whatever protein you like best – scallops or shrimp would be delicious!
