Cook a bag of almond pasta according to the directions on the bag.
While the pasta is cooking, start the sauce by melting butter in a saucepan.
Add spinach and mix for 1 minute.
After 1 minute, add cream cheese and mix well for a couple of minutes.
Add cream, shredded parmesan, and a couple of garlic cloves. Mix well on low.
Taste sauce and add some salt, pepper, garlic powder, chili flakes, lemon zest, or some fresh herbs. (You can do whatever you like and all of these are great options.)
Once the pasta is boiled, strain, add a couple of tablespoons of the pasta water to the sauce to lighten it up if needed.
Add the pasta to the sauce and cook for about a minute.
Top with whatever protein you like best – scallops or shrimp would be delicious!
