Ingredients:
2 oz or 1/4 cup softened cream cheese
2 eggs
1/2 teaspoon cinnamon
1 teaspoon erythritol
1 tablespoon butter
Needed:
Instructions
Place all ingredients in a small blender and blend 30 seconds, or until smooth. Let the batter rest 2 minutes
Heat the butter in a 10 inch skillet over medium heat.
Pour 1/4 batter into pan and tilt the pan in a circular motion to create a thin pancake about 6 inches.
Cook 2 minutes or til center is no longer glossy. Flip and cook for 1 minute on other side.
Make a total of 4 pancakes.
