Ingredients:
3 oz of diced carrots
3 tbsp of diced onions
1 tbsp of diced bell pepper
1 tsp of diced garlic
3 tbsp of diced celery
10 oz of cauliflower florets
3 lb of chicken
2 tbsp of chopped parsley
2 tbsp of butter
1 tbsp of salt
One whole onion and one whole carrot for stock
2 quarter of the water
Needed:
Instructions
In a medium pot put chicken, peeled whole onion and carrot, add water
Bring to a boil and reduce heat to slow
Skim and simmer 1.5 hours
Take the chicken off, let cool enough to touch and pull the meat from bones
In a medium skillet melt the butter and sweat diced vegetables for 5 minutes
Season the stock in the pot and skim again if needed
Add cauliflower florets and bring to a boil, add sweated veggies and pulled chicken
Simmer for 5 minutes and take off the heat, add chopped parsley and let rest for a while
