Instructions

  • In a medium pot put chicken, peeled whole onion and carrot, add water
  • Bring to a boil and reduce heat to slow
  • Skim and simmer 1.5 hours
  • Take the chicken off, let cool enough to touch and pull the meat from bones
  • In a medium skillet melt the butter and sweat diced vegetables for 5 minutes
  • Season the stock in the pot and skim again if needed
  • Add cauliflower florets and bring to a boil, add sweated veggies and pulled chicken
  • Simmer for 5 minutes and take off the heat, add chopped parsley and let rest for a while
