Chia, Pumpkin and Mushroom Stuffed Chicken

Ingredients:
3 lb whole broiler chicken
4 oz of fresh champignons
10 oz of Butternut squash
1/2 cup of water
3 tbsp of chia seeds
1 plum tomato
2 tbsp of olive oil
2 Tbsp of butter
2 tbsp of chopped onions
1 bunch of kale
1 tbsp of lemon juice
1 tsp of ground black pepper
1 tsp of garlic powder
2 tsp of paprika powder
1 tsp of cumin powder
1 tsp of chili flakes
1 tbsp of salt

Instructions
Preheat the oven to 460.
Soak chia seeds in water.
Dice squash and mushrooms, sweat them with butter and onions in a skillet for 5 min.
Add diced tomatoes and lemon juice, salt to taste.
Mix spices and salt and rub the chicken with them from inside and outside.
Spread a good amount of olive oil all over the chicken’s skin.
Combine squash mixture with chia seeds and stuff chicken from the rare side.
Use a bamboo skewer to stitch the skin edges to keep stuffing sealed inside.
Transfer chicken belly up to a baking tin or a skillet.
Braise in the oven for 40-50 minutes.
