Preheat the oven to 435F/225C then place parchment paper on 2 large baking sheet.
Ensure that the cauliflower is chopped roughly then add them into a food processor or a high-speed blender and blend until it looks like rice.
Place the blended cauliflower into a microwave safe bowl, cover the bowl then microwave for about 10 minutes.
Once this is done, let the cauliflower cool for a few minutes then add into a large mixing bowl.
Next, into the bowl containing the cauliflower, add in the eggs, 2 cups of mozzarella, oregano, garlic, salt, and pepper to taste then mix everything properly to combine.
Equally, divide the mixture into two and place each on both lined baking sheet then shape into pizza crust or round patties.
Place the baking sheets into the preheated oven then bake for about 25 minutes until it becomes nice and golden in color.
Next, the cauliflower patties out of the oven, add some sprinkles of the remaining mozzarella cheese, place back into the oven and bake for an additional 5 minutes until the cheese melts completely, serve.
