Instructions

  • Peel and cut cauliflower.
  • In a pot melt butter and sweat cauliflower for 5 minutes and medium heat.
  • Add nutmeg and garlic powders and sweat for another 30 seconds.
  • Add milk to barely cover, bring to a boil, cover with a lid and simmer for 20 minutes.
  • Meanwhile, preheat the oven to 420.
  • Add hot heavy cream to the pot.
  • Blend with a stick blender to a smooth puree season with salt.
  • Transfer the puree to a greased baking tin or a skillet and top with cheese.
  • Bake for 10-15 minutes to gratinated top and garnish with mint.
