Ingredients:
20 oz of cauliflower
0.5 cup of heavy cream
3 cup of milk
1 tbsp of salt
2 tbsp of butter
4 oz of mozzarella
1 tsp of nutmeg powder
1 tsp of garlic powder

Instructions
Peel and cut cauliflower.
In a pot melt butter and sweat cauliflower for 5 minutes and medium heat.
Add nutmeg and garlic powders and sweat for another 30 seconds.
Add milk to barely cover, bring to a boil, cover with a lid and simmer for 20 minutes.
Meanwhile, preheat the oven to 420.
Add hot heavy cream to the pot.
Blend with a stick blender to a smooth puree season with salt.
Transfer the puree to a greased baking tin or a skillet and top with cheese.
Bake for 10-15 minutes to gratinated top and garnish with mint.
