Instructions

  • Preheat the oven to 350
  • In a saucepan add butter and sweat cauliflower florets and smashed garlic clove for 5 minutes
  • Add 1 cup of water and simmer until soft stirring occasionally
  • Add cream, bring to a boil, set aside, add tahini, 1tsp of salt and cumin
  • Blend to smooth and chill
  • Separate egg whites and yolks
  • Whip egg whites and cream of tartar with the mixer to a stiff picks
  • In a mixing bowl mix egg yolks, remaining 1tsp of salt, garlic powder and cream cheese
  • Add whipped whites to the bowl and gently fold them into the mixture with a spatula
  • Ladle circles of batter to a baking sheet layered with greased parchment paper
  • Try keeping at least 2 inches gap between bread circles
  • Bake in the oven for 12-15 minutes
  • Plate hummus and season it with zaatar, paprika, chives and EV olive oil
