Cauliflower Hummus and Keto Cloud Bread

Ingredients:
1 lb of cauliflower
2 tbsp of butter
1/4 cup of heavy cream
1 garlic clove
1 tsp of ground cumin
1/2 tsp of zaatar mix
1 tbsp of minced chives
1/2 tsp of paprika powder
1 tbsp of tahini
1 tbsp of EV olive oil
3 eggs
1/4 tsp of baking soda
1/4 tsp cream of tartar
1 tsp of garlic powder
3 tbsp of whipped cream cheese
2 tsp of salt

Instructions
Preheat the oven to 350
In a saucepan add butter and sweat cauliflower florets and smashed garlic clove for 5 minutes
Add 1 cup of water and simmer until soft stirring occasionally
Add cream, bring to a boil, set aside, add tahini, 1tsp of salt and cumin
Blend to smooth and chill
Separate egg whites and yolks
Whip egg whites and cream of tartar with the mixer to a stiff picks
In a mixing bowl mix egg yolks, remaining 1tsp of salt, garlic powder and cream cheese
Add whipped whites to the bowl and gently fold them into the mixture with a spatula
Ladle circles of batter to a baking sheet layered with greased parchment paper
Try keeping at least 2 inches gap between bread circles
Bake in the oven for 12-15 minutes
Plate hummus and season it with zaatar, paprika, chives and EV olive oil
