Ingredients:
1 lb of cauliflower florets
1 lb of chicken thighs
3 tbsp of butter
2 cloves garlic crushed
3 oz of leeks finely chopped
1/2 cup cream cheese
1/2 lemon juiced
3 oz of cherry tomatoes halved
6 oz of shredded mozzarella
1/4 cup of heavy cream
1 tbsp of green pesto
Salt and pepper to taste

Instructions
Preheat the oven to 400 F. Mix cream and cream cheese with pesto and lemon juice.
In a large pan over medium-high heat, melt the butter and sear chicken to a golden brown
Season chicken with salt and pepper and transfer to a greased baking dish
Pure the cream mixture and top with leek, tomatoes and cauliflower
Bake in the oven for 20 minutes
Top casserole with shredded mozzarella and bake for another 10 minutes.
