Ingredients:
2 egg yolks
2 tbsp of ground parmesan
2 stripes of bacon
1 clove of garlic
2 tbsp of dry white wine
1/2 cup of water
1 tbsp of basil
1 tbsp of chopped onions
4 oz of zucchini noodles
1 tbsp of butter
1/2 tsp of salt
1/2 tsp of ground black pepper
Ground parmesan for garnishing
Needed:
Instructions
Slice bacon and brown it In a large skillet.
Add crushed garlic clove and onions, sweat for 2-3 minutes at medium-low
In a blender cup pulse egg yolks, cheese, wine and water to smooth
Add noodles to the skillet, season with salt and pepper and sweat for 1 more minute
Add egg mixture to noodles and bring to a boil at medium-high stirring constantly
Toss and stir zoodles until the sauce thickens, take off the heat and toss basil in.
Plate with ground parmesan on the top
