Ingredients:
½ Aubergine (~4 oz. / 120), diced
3 oz. (90g) Red pepper, diced
3 oz. (90g) Tomatoes, diced
1 oz. (30g) Parsley, chopped
½ oz. (15g) Capers, chopped
2 sprigs of thyme
1 tsp of oregano
Extra virgin olive oil to season
½ Lemon, juiced to season
Sea salt to season
3 oz. (90g) Gruyere cheese, grated
Needed:
Large pan
Instructions
Heat the pan, add olive oil and fry the aubergine till golden, then remove the aubergines and set aside
Heat the pan, add olive oil and fry red peppers and tomatoes, with thyme and oregano
Add back the aubergine, and parsley / capers
Season with olive oil, lemon and salt
Top with gruyere cheese
Season and serve
