Ingredients:
½ head of Cauliflower, medium (4 oz. / 120g), grated
½ oz. (15g Capers), chopped
1 Garlic clove
⅓ cup (90ml) Heavy cream
Sea salt to season
Needed:
Small pot
Blender
Instructions
Bring a pot of water to the boil
Add cauliflower and garlic clove, boil for 3 minutes, drain water
Add Cauliflower back to the pot with cream and seasoning, bring to the boil
Remove from heat and cool for 3 minutes, before pulsing the mixture in the blender till smooth
Add capers and mix into a dip
Season and serve
