Breakfast for 2: Savory Scallion & Cheese Pancakes with Eggs & Avocado

Instructions

  • In a large mixing bowl combine almond flour, coconut flour, sea salt, baking powder, and garlic powder to taste. Mix all of your dry ingredients well.
  • Add large egg, avocado oil, coconut milk and almond milk. Mix well and let sit for about 5-10 minutes.
  • To the batter, fresh scallion and cheese of your choice.
  • At this point, you want your batter to be semi liquid. Add one or two more tablespoons almond milk if needed.
  • Heat up a pan to medium, spray with oil and pour in a heaping tablespoon of the batter. Turn the heat to low-medium and flip over once you see bubbles forming on the pancakes.
  • Once plated, garnish up with some more fresh green onions or micro greens for you and your loved one! Serve with poaches eggs, some sliced avocado, and strawberries.
