Bolognese Zucchini Boats

Ingredients:
12 small zucchinis
1 lb of ground beef
1 tsp of salt
1/2 tsp of ground black pepper
1/2 tsp of garlic powder
1 tbsp of chopped basil
1 tsp of soy sauce
3 oz of peeled plum tomatoes
3 oz of shredded mozzarella
3 oz of champignons
2 tbsp of minced onions
2 tbsp of EV olive oil
2 tbsp of butter
1/2 cup of dry red wine

Instructions
Preheat the oven to 400
In a large skillet sweat onions and diced champignons for 3 minutes at medium high heat
Add ground beef to the skillet and cook it stirring constantly until golden brown
Season with salt, garlic powder and pepper, add glass of red wine and soy sauce
Simmer for another 3-5 minutes, add a cup of water and tomatoes
Simmer for 20 minutes, add basil and cool down
Meanwhile cut zucchinis lengthwise and carefully scoop the flesh out with spoon
Season them with salt to taste and sprinkle with olive oil
Fill zucchinis with meat mixture and transfer them to a baking sheet
Top with shredded mozzarella and bake in the oven for 15 minutes
