Ingredients:
6 Oz Baked Beets
3 Oz Arugula
2 Oz Peach
2 Oz Almonds
1 Tbsp Flax seeds
3 Tbsp EV Olive Oil
1 Tbsp Lemon Juice
1 Tbsp Zero Carb Syrup
6 Oz Soft Goat Cheese
1 Tsp Salt

Instructions
Use cooked beets or bake fresh prior at 410F for 1 hour 15 minutes, cool down, peel and slice.
For the dressing combine lemon Juice, salt, EV olive oil and zero carb syrup
Season arugula, chopped basil, sliced beets and crushed nuts with the dressing and toss
Plate dressed salad in a bowl, crush cheese on the top, garnish with sliced peaches.
